"MMM... March Mimosa Mondays" - Strawberry Rhubarb Mimosa

I think strawberry and rhubarb is the quintessential combination.
Add in champagne (or sparkling cider) and you have some serious Mimosa Goodness.

To make one yourself-


Combine 1 cup cut rhubarb and 1 cup sliced strawberries.


Add in 2 cups of water, 1/3 cups of sugar and bring to boil.
Reduce heat and simmer for 10 minutes.


Pour through strainer. Set strawberry rhubarb simple syrup aside to cool.


Throw rhubarb away. Combine cooked strawberries with 2 cups of white grape juice (or apple juice) and strawberry rhubarb syrup in a food processor. Blend well.


Strain out strawberry seeds, store strawberry rhubarb juice.


Add equal parts strawberry rhubarb juice and champagne for a seriously fabulous Ruby June Mimosa. Try this (and take pictures and email us for a "reader feature").
